Coconut Pound Cake


Hello! Lynn here. Last Saturday, I decided to fly to Idaho to spend some time with my family. I have missed the loveliness of this state. When I moved to Idaho a few years ago, people in California told me that I was going to be totally depressed by the weather, that I would hate it and I would get very homesick. The contrary could not have been more true. I fell in love with this state and I think I really consider it one of the most amazing places in the world. In a way, I am coming home.


Mom and I decided that we would make some yummy Coconut Pound Cake for some friends for Valentine's Day. It is so moist and delicious. You have to try this! We baked them in cute little pans, wrapped them in cellophane bags, and packed them inside these adorable mailbox tins. ($1 section at Target.) Mom is so creative, no wonder we are the way we are!

Coconut Pound Cake

4 large egg whites and yolks
1 cup unsalted butter, softened
2 cups sugar
1 cup coconut milk
2 teaspoons baking powder
1 tsp vanilla
2 1/2 cup flour
1 cup shredded coconut

Preheat oven to 350 degrees. Butter and flour cake pans. (We used small individual cake pans. Sized 2x3 approx.) In an medium bowl, beat egg whites until stiff peaks form. Set aside. In a large bowl, blend together egg yolks, butter and sugar. Beat until fluffy. (It's so fluffy, I'm gonna die!) Add the milk, baking powder, vanilla and flour. Beat for five minutes. Stir in coconut then carefully fold in the egg whites. Pour better into the pans. Bake for one hour. Cool in pans for 10 minutes, then remove.
