Moroccan Rice and Chicken
I'm so sorry for posting late today. I had an appointment earlier today and it was impossible for me to post earlier. Thank you for your understanding. I've made it worth your while.
I love it when I find a easy meal to prepare. I love it even more when I can prepare it with a little bit of my flair. I found a fantastic vegan recipe for Spiced Lentils and Rice, however I felt there were a few things that I wanted to add. I thought some chicken, garlic, mandarin oranges and a dash of lime juice would be the perfect touch to make this a complete meal.
Moroccan Rice and Chicken
1 cup brown rice
1/2 cup lentils
2 boneless, skinless chicken breasts
2 peeled cutie oranges or 1 large can mandarin oranges
1 Tbsp. ground cinnamon
1/2 tsp. nutmeg
1/2 tsp. cumin
1/4 tsp. ground black pepper
1 tsp. salt
1 tsp parsley
1 Tbsp. minced garlic
1 Tbsp. lime juice
1 tomato (optional)
Place brown rice, lentils, cinnamon, nutmeg, cumin, black pepper, salt and parsley in a rice cooker (if you have one).
If not, cook brown rice and lentils in separate pots. The brown rice will take a while longer to cook than the lentils, approximately 20 minutes more.
Cook chicken and shred when fully cooked. Once both the brown rice and the lentils are complete, combine the cinnamon, nutmeg, cumin, black pepper, salt and parsley in a serving bowl. Cut orange slices into smaller pieces. Add the minced garlic and lime juice. You can add a tomato if you wish.
Delicious! It's fantastic and a great meal for a cold night.
